Microwave Banana Bread


This is the fastest recipe ! It’s moist and sweet without any sugar (except from the banana). I love this recipe because I can make it at the office or anywhere with a microwave!

Makes 1 banana bread (approx. 1 cup)

Ingredients:
  • 1/3 cup almond flour
  • 1 Tablespoon coconut oil, melted
  • 1/2 ripe banana
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract (optional)
Cooking method
1. Mix all the ingredients together in a microwaveable mug – mash the banana in with a fork.
2. Microwave on high for 90 to 120 seconds (1.5 to 2 minutes).
3. Let cool for 5 minutes and eat from the mug or gently tip out onto a plate.
