Mango Ginger Coconut Ice Cream

I gave up dairy ice-cream a while ago, so it’s wonderful to be able to enjoy creamy Paleo “ice cream” still.

Makes 2 small ramekins

Ingredients:
1 cup frozen mango chunks
1/4 cup coconut cream
1/4 cup unsweetened shredded coconut
1/2 Tablespoon lime juice
1 teaspoon ginger, grated as topping
2 Tablespoons raw honey

Cooking method:
1. Let the mango chunks defrost for 5 minutes at room temperature.
2. Blend the mango, coconut cream, shredded coconut, lime juice, and raw honey well.
3. Top with the grated ginger.
