Frozen Chocolate Coffee Truffles

I had an epiphany one night in bed - why not use the ice-cube tray to make frozen coconut butter desserts! It took me a few weeks before finally getting around to trying it out, but the recipe was an instant success - it tasted great despite the super low honey amount! Note that while this is another really easy recipe, it does require a bit of time sitting in the freezer. I love making a large batch of these to sit in the freezer for whenever

Makes approx. 6 truffles

Ingredients:
1/2 cup coconut butter
3 Tablespoons 100% cocoa powder
1 Tablespoon ground coffee
1 Tablespoon unsweetened shredded coconut
1/2 teaspoon raw honey
1 Tablespoon coconut oil

Cooking method:
1. Melt the coconut butter (in a microwave) so that it can be mixed easily with a fork.
2. Mix in all the ingredients (except the coconut oil) and mix well with a fork.Take an ice-cube tray and pour approximately 1/4 teaspoon of coconut oil into 6-7 of the cups.
3. Spoon the mixture into each cup of the ice-cube tray and gently pat them flat with a fork.
4. Freeze for 4-5 hours.
5. Defrost at room temperature for 15-20 minutes before serving.
