EGGS MIMOSA WITH TUNA: FRENCH DEVILED EGGS

Eggs Mimosa with tuna is the French version of deviled eggs, also known as “Les Oeufs Mimosa Au Thon”. This recipe is a delicious type that combines hardboiled egg, tuna, mayonnaise, shallots, curry … A treat that will both delight young as grown people.

These hearty, flavor-packed French deviled egg make a fantastic brunch, lunch, and appetizer… even better an appetizer for Easter day.

INGREDIENTS
  •     6 eggs
  •     1 can of tuna
  •     1 garlic clove
  •     1 shallot
  •     1 tbsp. of mayonnaise
  •     1 tbsp. of chopped parsley
  •     1/2 tsp. curry
  •     Salt
  •     Freshly ground pepper
Cooking method
STEP 1
Boil the eggs in a pot in over medium heat. For hard-boiled eggs, allow 8 min of boiling time. Once cooked, peel them, then cut them in half lengthwise. Separate the whites from the yolks and put them in 2 different dishes.

STEP 2
Mix the yolks with the tuna, minced shallot, chopped garlic, curry, salt and pepper. Mix well while gradually adding mayonnaise.

STEP 3
Fill your egg whites with the preparation then sprinkle with parsley and curry.

STEP 4
Serve chilled, with some asparagus, baguette, or seasoned crudités.

TIPS
This mimosa egg recipe is one variation among many. You can of course replace the tuna with minced bacon, minced shrimp or minced smoked salmon, and parsley with chives (not too much!). If you are not a fan of curry, replace it with another spice such as paprika or sweet pepper. And if you like slightly more spicy dishes (or starters), add a teaspoon of mustard or old-fashioned mustard to your preparation.
