Chocolate Chia Pudding

Chia seeds are fantastic for making pudding (the seeds puff up when soaked so you get a tapioca-like dessert).

Makes 2 espresso cups

Ingredients:
2 Tablespoons unsweetened cocoa powder
1 cup unsweetened coconut milk
1/3 cup chia seeds
1 Tablespoon unsweetened shredded coconut (for topping)
Spices and/or sweetener of choice (I didn't use any spices or sweeteners as there was a tad bit of sweetness from the coconut milk naturally)

Cooking method:
1. Mix together all the ingredients in a bowl.
2. Cover the bowl and refrigerate overnight (approx. 6-10 hours).
3. Blend the mixture until smooth (this helped to get all the cocoa powder nicely mixed in).
