TONY ROMA’S CAROLINA HONEYS BARBECUE SAUCE


I wonder why the version of this sauce at the restaurant is so different from the bottled sauce that you can find in stores. You can clearly see the difference in the color: the bottled version is so dark that it’s almost black. And the bottled sauce has much more molasses flavor in it—way too much, in fact, if you ask me. That’s why this time around I hacked the restaurant version of this great barbecue sauce .

1 cup ketchup
¾ cup water
¼ cup white vinegar
3 tablespoons dark brown sugar
2 tablespoons molasses
1 tablespoon honey
¼ teaspoon plus ⅛ teaspoon salt
¼ teaspoon paprika
¼ teaspoon hickory liquid smoke


Cooking method

1-Combine all of the ingredients in a small saucepan over medium heat.

Bring to a boil, then reduce the heat to medium/low and simmer for 25 to 30 minutes or until thick. Remove from the heat, cover, and cool.
