Vanilla Madeleine Cookies

These amazing vanilla Madeleine cookies were a complete mistake. I was trying to make Paleo French Macarons, and these popped out! All I can say is that they taste remarkably like Madeleines, which are delicious!

Makes 12 small cookies

2/3 cup almond flour
4 Tablespoons raw honey
3 large egg whites
stevia equivalent to 3 Tablespoons of sugar
1 and 1/2 teaspoons vanilla extract

Cooking method:
1. Preheat oven to 350F (175C).
2. Beat the egg whites using an electric mixer until peaks form.
3. Fold in the almond flour, honey, stevia, and vanilla extract.
4. Using a spoon, drop small dollops of the mixture onto a baking tray lined with parchment paper.
5. Bake for 12 minutes until slightly golden on top (they burn quickly so remove immediately).
6. Let cool before peeling off the parchment paper.
