Raw Coconut Cookies

These miniature cookies are a bit tricky if you don't get the ingredient proportions just right (because you're relying on the coconut oil and the honey to hold everything together). But apart from that, these are super easy and delicious!

Makes 8 1-inch cookies

2 Tablespoons coconut oil, melted
2 Tablespoons raw honey
1/2 cup unsweetened shredded coconut
1/2 cup ground almonds
chocolate chips for topping (optional)

Cooking method:
1. Mix all the ingredients together well.
2. Using your hands, form small cookies and place on a plate to refrigerate (placing a piece of parchment paper on the plate helps).
3. Refrigerate for 15 minutes.
