It seems to me that many rice recipes call for too much water. Even recipes printed right there on the package of rice often have it wrong. So here is the secret formula for perfect brown rice. But not just any brown rice. This is cilantro-lime brown rice just like the stuff you get at America’s second-largest Mexican chain. Use it as a side for any dish or on burritos just like they do at Chipotle Mexican Grill.

3¾ cups water
2 cups uncooked brown rice
2 tablespoons unsalted butter
1 teaspoon salt
¼ cup minced fresh cilantro
4 teaspoons lime juice

Cooking method

1-Combine the water, rice, butter, and salt in a 3-quart saucepan over high heat.

2-When the liquid begins to boil, reduce the heat to low and cover the saucepan. Cook for 45 minutes, then turn off the heat and let the rice sit, covered, for 10 to 15 minutes or until tender.

3-Stir in the cilantro and lime juice.
