Garlic, chile, and oregano canola oil


MAKES 1 CUP V D P C
5 garlic cloves
2 tbsp red chile
1 tsp dried oregano
generous 1 cup canola oil

Method

1. Preheat the oven to 300°F/150°C.

2. Cut the garlic cloves in half lengthwise. Using gloves, remove the seeds from the chile and chop the flesh into small pieces equalling 2 tablespoons.

3. Mix the garlic, chile, oregano, and oil together in an ovenproof glass dish. Place in the center of the preheated oven and heat for 1½–2 hours. If you have a digital thermometer, test the oil. It should reach a temperature of 250°F/120°C before you remove it from the oven.

4. Remove from the oven, let cool, and then strain through cheesecloth into a clean jar. Cover and store in the refrigerator.
